CHEF DEL COOK is a global explorer of taste. Born in a small town in rural Canada he apprenticed in some of Canada's top kitchens before moving abroad to Japan. It was there that the concept of craft in cooking took hold. After working in Michelin starred Japanese restaurants he began a 10 year project to explore cooking in rural Japan on the outskirts of Kyoto. After forging deep relationships with artisans and farmers he has embarked on a book series that will chronicle the lives of artisans in Japan. He currently splits his time between Tokyo and Hokkaido.
