BEST PIZZA NISEKO
Opened with the noble goal of matching the traditional authenticity of wood-fired Neapolitan pizzas with the pure natural beauty in Niseko, Pizza Del Sole is unquestionably the best pizza Niseko has ever had. The Japanese chef-owner spent several years learning the craft of making pizza in Italy then returned to his native homeland to make his dreams a reality. The wood-burning oven is authentic and with both its bricks and design imported from Italy. Once arrived an expert team flew into Niseko to assemble the oven in the restaurant. A 5 day firing in order followed to “cure” the bricks and seal the oven prior to baking the first pizza.
Each day the oven is pre-fired for several hours in order to reach the high internal temperature required to cook each pizza in 90 seconds. The dough used for the pizza utilizes a special type of flour, mixed and fermented with a special sourdough starter as per the strict specifications of Napoli pizza. Following the fermentation the dough is portioned and then shaped expertly by hand which adds complexity to both taste and texture. The result is a pizza of incomparable texture and flavour. New fusion combinations are thankfully absent here. The purity of classicism are the driving force behind this chef’s ambitions. With only 15 seats quality clearly takes priority over turnover. We noted that the small bar counter seats were removed for the 2015 season – a further indicator that Pizza Del Sole is clearly intent on making Niseko best pizza.
Appetizers are basically combinations of quality Italian charcuterie and locally farmed salad greens and satisfyingly set the stage for the real star of the show. Dessert is a choice between a variety of gelato flavours or Affogato – ice cream topped with espresso.
Just as authentic as the pizza production is the Elektra Espresso machine topped with a gold eagle towering beyond the counter. Be sure to finish your meal in true Italian style with a darkly extracted espresso topped with foamy “la crema”.
The menu has four sections all of which show the Fourteen classic pizzas are on the menu and range in price from 1200 to 2400円. Take-out pizza is available only with an advance order. Be sure to call in your pizza order ahead of your visit. A small selection of quality beers and wine are available. The Sapporo beer on draft is made from spring water and only available in Hokkaido due to a law preventing export of spring water in any form.
2015 Winter Opening begins on December 12.
In place of the removed seating in the restaurant is the resumption of pizza takeout and delivery services. Customers are strongly advised to order ahead of time as this is a business that strives for quality above convenience. Advance notice also allows the small but highly skilled staff to organized your order and deliver it in peak condition. Be warned that Pizza del Sole will not bend on quality for convenience! This is a refreshing stance for the connoisseur but could be frustrating for those expecting the “pizza chain” norm for timing and convenience.
Not only is Pizza del Sole the best pizza in Niseko but it is also one of the best restaurants based on the quality of the food served. The carefully composed and charred pizza with perfect ratios of toppings has few pears in Niseko when it comes to delivering an exceptional gourmet food experience.
