FUJI PATISSERIE KUTCHAN

Those of you who have been to SPROUT OUTDOOR ESPRESSO looking for a snack to go with a coffee will no doubt have been redirected to FUJI Patisserie Kutchan.  Here the specialty is chou cream and roll cakes – basically anything to do with fresh whipped cream.  The store itself is like walking into the sun as everything from the signs to the oven to the staff uniforms is a bright golden hue of yellow.  Once you are able to focus you will find yourself hovering in front of multiple showcases filled with chou cream, roll cakes and cookies.  The large cookies target the kiddies however the choux cream is clearly the star here.  The shop has a regular following for choux cream alone.  It is inexpensive, baked fresh daily and absolutely delicious!

If you are in the mood for a coffee pickup a few of the golden crusted chou creams and head to SPROUT cafe to pair it with one of their dark espressos or single origin French press coffees.

THE BIG YELLOW OVEN

When you first enter into Fuji Patisserie Kutchan you encounter a large yellow oven with the letters NANBAN shining in silver.  This is your first clue that this shop takes it pastries seriously.  NANBAN is a famous Japanese oven maker that stands out for its richly hued paint and dynamic temperature control.  It is one of the best ovens and can be found in serious pastry shops across Japan.  In the case of airy pastries like choux cream and sponge cake the control afforded the patissiere is a huge advantage.  These ovens are not cheap by any means so it is always a good sign when a pastry shop has one.

ROLL CAKE

Roll Cake can reach obsessive levels in Japan.  It’s beauty is in it’s simplicity and the the Fuji Patisserie version stays true to this spirit.  Soft and spongey cake wraps around air-filled vanilla cream that looks as good as it tastes.  This is a cake that absolutely must be made fresh every day so don’t be deterred by the somewhat empty patisserie showcases here – they only make what they can sell each day at Fuji Patisserie.  This is a real luxury usually not afforded customers outside urban centers so take advantage.


 

COOKIES & MINI CAKES

Aside from the choux cream and roll cakes there are many types of French-style cookies and mini cakes to be bought individually or as part of a gift set.  A variety of gift baskets are available in a multitude of sizes to mark a special occasion in Niseko.  Their X-Large cookies are likely to grab the eyes of any children in your group so be warned!
