Sitting behind the front Restaurant building of the Lupicia Niseko Villa are two other strikingly angular buildings.  The building on the left houses 4 staff, a prep kitchen and a cool kitchen dedicated to the production of handcrafted charcuterie, cured and smoke hams, sausages and pâtes.  All of these can be procured from the boutiques and also appear on the menu within the front Lucpicia Niskeo Restaurant.

ARTISAN BAKERY

Lupicia Niskeo Artisan Breads are one of the hidden treasures in Niseko.  Without going into the building itself one may never know where to find the best breads in Niseko.  Upon entering Lupicia Niseko Boutique a large table with a variety of rustic breads is the first thing one notices.  What may not be immediately clear is that these breads are made in a traditional slow-fermented way with Hokkaido grown flour.  Ranging from large to small and rustic to refined it is an impressive display of craftsmanship.  Even better is the complex textures and flavors they release with each bite.  These are exceptional breads no matter what city or town you live in.

Although Lupicia is located outside of central Hirafu these breads are so good they are well worth the extra time to obtain.  Whether you are planning an aprés ski party or just chilling by the fireplace with a glass of wine these are the breads you want to have by your side.  Along with the charcuterie, salads and preserves sold within the Lucpicia Niseko Boutique one could easily plan a casual meal that would please even the most fickle gourmand.

HANDMADE CHARCUTERIE & SALADS

Sitting behind the front Restaurant building of the Lupicia Villa are two other strikingly angular buildings.  The building on the left houses 4 staff, a prep kitchen and a cool kitchen dedicated to a small handcrafted production of charcuterie, cured and smoke hams, sausages and pâtes.  All of these can be procured from the boutiques and also appear on the menu within the front Lucpicia Niskeo Restaurant.  These are products made in the way centuries of craftspeople have been making in Europe.  Most meats reflect the local environment although no compromises have been made in the way they are made.  The Pâté Compagne is coarsely textured and shows classic liver undertones yet never becomes cloying or heavy.  This is fantastic with the baguette made with Hokkaido flour and would be even better in front of a chalet fireplace in winter. A variety of both meat and seafood pâtés are available along with impressively colorful pressed vegetable terrines and mousseline.

Large modern showcases run the length of the room and include not only the charcuterie but also a colorful variety of salads ranging from carrot to lentil and potato.  One really needs to go no where else given the quality and selection available here.  Hanging in a glass showcase near the entrance are large cured hams and smokey bacon.  One can takeout any of these items or eat casually by the front window for lunch.

PÂTISSERIE

Hidden within the boutique and behind the showcases is a professional pastry and bread kitchen.  Within 2 dedicated staff churn out daily pastries, desserts and artisan breads.  Classic desserts like Mont Blanc, Gateaux Chocolat , fruit tarts and carrot cake are available and the selection periodically changes.  All desserts are available for takeout and some can be eaten within the boutique or may appear on the Lupicia Niseko Restaurant menu at both lunch and dinnertime.  Also available are macarons in a rainbow of colors and flavors including classic pistachio, chocolate, caramel and fruit.  Japanese flavors also appear in the form of yuzu and matcha.

PRESERVES & CONFITURES

Yet another find within the Lupicia Niseko Boutique are a collection of vinegars, vinaigrettes, jams and fruit confit.  Classic blends along with Japanese flavor combinations  like Ginger-Lemon and Apple-Soy-Onion which are all made in the adjacent building.  Whether you are hosting breakfast, lunch or dinner you will certainly find what you need here.  The focus is very much on Artisan crafted foods and condiments here and includes many reputable brands from throughout Japan.
