NISEKO MILK KOBO
Established in 1996 Niseko Milk Kobo uses the milk and cream produced on the dairy farm next door to make all of its produce. Located on a large site in the Higashiyama area Milk Kobo is worth searching out whether in the summer season post white water rafting or after a day skiing the powder-coated slopes in the deep winter. Their fresh cakes are founded in the techniques of French patisserie. One can find a wide assortment of simple desserts such as melting cream puffs, rich cheese cake tarts and sugary rusks. The magic of Milk Kobo is their use of impeccably fresh ingredients that are then finessed into well-executed pastries or creams. Always fresh out of the oven at around 10am. the temperature adds to the magnificence of these constructions. After ordering cream puffs watch them being filled with an airy pastry cream rich in vanilla.
The dairy farms of Hokkaido are famous throughout Asia for producing milks, creams and butter of exceptional high quality. It is an often surprising fact for foreigners that the dairy produced in Hokkaido matches or exceeds the quality of their own countries – particularly those from the West. Their is a meticulousness that is applied by farmers, craftsmen and producers in Japan that is both consistent and for consumers – highly d
Takahashi Dairy Farm is the owner of Milk Kobo – a rare combination of farm and food production. A policy of treating its dairy cows with respect and care translates to cows that are milked by-hand, raised on the highest quality natural feed and drink the extraordinary water streaming from nearby Mount Yotei. It is an admirable approach that results in exceptional products.
Arriving a Milk Kobo on a clear day means stunning views of Mount Youtei. Within the building there is small café serving food and hot and cold beverages, a yogurt workshop, outdoor apparel store, art studio and gift shop.
The Cream Puff Pastry has a light, crispy exterior that gives way to a melting interior of luxurious, vanilla flavored pastry cream. At once light and rich this is one of the stars at Milk Kobo that shows off the greatness of their farm made cream. Eat one in the store to appreciate the contrasting temperatures of warm pastry shell and cool, creamy interior – then take some home to chill in the fridge. Chilling firms up the interior and provides a different textural experience than the ones eaten in the store.
The other star dessert here is the cheesecake tart. Sitting in the centre of a rich, buttery and crispy tart shell is a souffléd cheesecake. The cheesecake has a brûléed top that holds a creamy, ivory interior within. It looks simple and plain but that would be the wrong assessment of this gastronomic gem. When simple food made from exceptional ingredients is executed perfectly there is simply nothing better. Milk Kobo has achieved this with their cheesecake tart. Texturally it juxtaposes an outer shell with a creamy interior which is always a winner. The well-judged thinness of the tart shell combined with its rich and buttery taste creates the magic here. Its cheesecake has a subtle crème fraîche tang that refreshes the palette as waves of creamy vanilla coat and fade across the palette like an ocean tide splashing the shores.
Whatever your disposition towards desserts Niseko Milk Kobo is one of the must visit destinations for food. It is located relatively central in the village and easily accessible by car or shuttle bus throughout the day. Eat-in or takeout there are many choices available beyond the two mentioned above including multiple flavors of ice cream. The view of Mount Yotei is worth the visit alone. A recently opened satellite shop in the arcade section of the Niseko Michi No Eki (Farmer’s Market) sells a limited selection of Milk Kobo’s desserts including a sensationally creamy soft ice cream cone.
